Ingredients
- 8 ounces dates (chopped pitted)
- 1 cup orange juice
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs (beaten)
- 4 tablespoons butter (melted)
Steps to Make It
- Gather the ingredients.
- Grease and flour a 9x5x3-inch loaf pan. Preheat oven to 350 F.
- In a saucepan, bring orange juice to a simmer. Remove from heat and stir in dates. Let stand until cooled, about 25 minutes.
- In a large bowl, combine the flour, baking powder, cinnamon, salt, and sugar; stir to blend. Beat the eggs and add to the cooled date mixture along with the melted butter.
- Pour the date mixture into the dry mixture and stir until blended. Spoon into the prepared baking pan. Bake for 40 to 50 minutes, or until browned and a toothpick inserted in the center comes out clean.
